What's your perfect winter meal?

Last week I had a proper pie from my local pub and it was the perfect heartening winter food I needed at the end of the day.

I love making extra spicy chilli con carne, or a proper lasagna bolognese with homemade bechamel sauce!

As Bitsnbats so rightly says, there are plenty to choose from. A couple of winter flowering examples among my favourites are Jasminum nudiflorum, small, bright, yellow flowers sufficient to form a wall of colour usually January to March but out since early December this year, perfect against a north-facing wall, fence or hedge; Lonicera fragrantissima (winter flowering honeysuckle), a bush-forming variety so can be used as a hedging plant or free standing. Both the Jasmine and the Honeysuckle are wonderfully scented too. There are several Hellibore varieties for soft colours at shoe level in wooded or shady areas, often hidden until you get close, a nice surprise. Note the characteristics of where you would like to see the colour, such as aspect (i.e. which direction it is most open to, or completely open), amount of light or shade, soil type (heavy, clay, sandy, loam, acid, alkaline or neutral), whether support is available such as trees, other taller plants, wall, fence, etc, etc, or free standing. There are probably winter flowering plants for that situation.

Embrace your garden this winter and make it a cozy place to huddle up with friends. Create an enticing space to enjoy sipping a cup of mulled wine. The key is to choose a small area close to the house, use lanterns, fairy lights, a few fur rugs, plenty of blankets and a fire pit to gather round and create a focal point. I was amazed by the bustling winter café culture which exists in Scandinavia. By creating the right environment with the help of heaters, fleece blankets and candles you can create an cozy outdoor area to enjoy a steaming mug of hot chocolate. Good lighting is also essential, particularly in winter when it can be dark by 4pm, You can still enjoy your outdoor space if well lit from the warmth of your interior space. Be sparing in your use of light, subtly illuminating key areas. Try to avoid glaring security lighting which will give a flat cold light. I always recommend lighting within the beds to illuminate the planting. Select evergreen plants and position the lights beneath to create atmospheric silhouettes of the leaves. This is also the perfect time to survey your garden and plan for the spring, it may be just a case of pruning or relocating plants or you might be planning a grander scheme and thinking about a complete re-design. This is the time to get to work with the plan, make notes and asses what has really worked this year and what has failed. I always think its essential to study a garden through all the seasons to see how the light falls before re designing a garden. Put on your thermals and get away from all the stuffy central heating, enjoy all your garden has to offer this winter!
