Best colour palate for a rental cottage

We are in the process of a back-to-brick renovation of the cottage on our farm. The kitchen will be white shaker style with wooden worktops, all tiles to kitchens and bathrooms are grey metro tiles BUT everything else is up for grabs in terms of wall colours, floor coverings and colours. I am loathed to fit biscuit coloured carpets and paint magnolia walls but equally it must appeal to a wide audience and be economic. I thought darker grey carpets to bedrooms, living room, dining room and white and black checkerboard to the kitchen / bathroom / utility floors would be nice. For the walls I considered light grey for but will it all be a bit too grey then? My other thought was painting all the walls white.
