Very low 6ft ceiling, wattle & daub, which paint to use?

I live in a 500 year old Tudor cottage. The ceiling in the main living room is only 6 foot high, so very low indeed. It's very lumpy and bumpy too, as it's hundreds of years old and made out of wattle and daub. The floor has red quarry tiles.
I'm going to paint the walls, but need advice on which type of paint to use on the ceiling. I'd like to let as much light in as possible. It's going to be impossible to hide the bumps on the ceiling so I'm not going to try, but at the moment the paint seems to have quite a gloss which accentuates the unevenness of the ceiling - but maybe that's a good thing for spreading the light through the room?
So should I use white matt paint? Or would anyone recommend a different type of paint? Or a different colour of paint?
