Dont want to lose all the cupboards & got nowhere else to put the washing machine, so could put a built in bench in place of the bar & then only lose use of the right lower cupboards????

You could add some roman blinds and dress curtains to the window to add character and create a focal point for that wall under which you could add a sofa and armchair in far right corner. I would add a large rug in the centre of the room and a floor lamp. Try loaf or BTC for lamps and Cox & Cox for lovely grey toned large rugs. I had a similar design quandary - hunt for OnePlan on Houzz. She has a sliding scale of design charges, and we paid for a couple of hours design work. She came up with several designs for us, and we were able to make some changes which she incorporated into the final sketch. We're currently getting quotes for the actual build.

Without seeing pictures it is hard to say. I would likely recommend sticking with the same material if you are adding on. That way it will not look like an add on but rather it was planned that way the whole time. Too many different materials is not always aesthetically pleasing.
