Normally you wouldn't mix browns with greys nor beige / cream with white. So I presume that you have a warm white and a warm grey tile.
It would be usual to have upstands in granite to match the work top. A splash back just for the sink area in glass will look a little out of place with granite and tiles, and probably be a different depth to the tile. Why are you not continuing with the tiles all round>
Do you have pics because it's hard to imagine where the splash back is going if you already have tiles.
I would stick to neutral colours as your kitchen sounds quite contemporary and anything to flashy may upset the balance. Black glass looks very elegant but a white or transparent splash back will help to open the room up. Grey is a good middle ground but too much grey can look rather drab. I would say that the deciding factor should be the size of the kitchen as black may close the room in. But it is wise in my opinion to go for the same finish as you have for the work tops. I have enclosed a CAD design of a kitchen with cashmere cupboards and a black glass splash back for inspiration. Would love to see some pictures of your kitchen!
