If you made timber stud walls and had the additional piece of roof mostly or all clear then you would still benefit from shade of the Wisteria in Summer. There are various clear roofing systems at different costs. Some access points (like rood lite windows) would be a good idea in two or three places, to prune the Wisteria. I built a structure in my garden using mainly reclaimed materials from a house demolition. Only the screws and clear roof panels had to bought. The wood-burning stove and the correct chimney with attachments is likely to be the most costly bit.

Some kind of terrace roof will allow you to use the space through more of the year. Umbris patio/terrace roofs have automated louvres in the roof so that you can allow sunlight to bath the terrace when nice weather. when it is raining the louvres close flat to create a fully watertight terrace cover (important in UK to use an outdoor space for more than a few months of the year).
