how to pretty, make the most of stream/drain running through garden

We have a stream/lincolnshire agricultural drain running through the middle of our property, steep banks are north and south facing and eroding in places. We want to make it look attractive and pretty perhaps increase the sound of the gently flowing water without obstructing the flow (don't want it to block up and cause flood!) even build a natural self flowing weir if possible! Have purchased some plants to try and help the soil in the meantime but would love ideas on how to secure plants into bank without causing a landslide!
