How would you make the most of this kitchen/living space?

I’m trying to work out how much I can achieve with our new to us (but otherwise rather dated) home. We’d like to make minimal structural changes so we can use our budget on eco-retrofit improvements. I would love to see what inspiration talented Houzz members may like to offer.
We’re planning to knock down the wall between kitchen and living area. I’d like to keep the shower room, utility and garage where they are. The ‘dining room’ will be the sitting room. We’re considering a rear extension to even up the back wall and enable a connection to the conservatory from the main living area.
The back of the house is southwest facing.
Here is a list of what I think our key requirements/desires are, but feel free to challenge!
- An island or peninsula at least 1.5m long with no sink or stove on it. Just clear bench space. It’s needed for non-cooking hobby.
- At least 2 bar stools
- Wall oven
- Full height pantry cupboard. Double would be fantastic.
- Decent dining space able to accommodate a table extended to seat 8. Day-to-day 4-6 should feel comfortable.
- I don’t like to feel like I’m eating in the kitchen (I’m a messy cook). I’d like some feeling of separation but still connected. (Eg peninsula with no sink or stove should help with that)
- Good flow. No squeezing around the table or furniture to get outside
- Room for cosy armchairs or a sofa in the living area would be nice.
- Potential sliding doors to sitting room but definitely don’t want to knock that through to a big open space.
- Glass door dividing hall to kitchen/living area ability to see light all the way from front to back
- Move door to utility slightly to give storage on the wall with garage
- Small extension to enable connection to the conservatory from living area (potential for conservatory to be converted to proper extension at some point). Could investigate an angle to ensure best use/protection from sunlight and to creat interest.
- I’m not sold on a full wall of bifolds. I think it would get too warm and they seem clunky for going in and out in cooler weather. So some other glazing/door treatment could be interesting. Window seat, sink by window, keeping lower wall to enable use with furniture are all options. But good access to garden is essential.
