If you don’t want the upheaval of removing the fireplace, how about painting everything in one colour? So paint the wooden shelves, the wall behind them and the fireplace in one colour. Using a darker shade is popular and will update it, though if you prefer lighter colours then a nice taupe or white with go well. Here’s some examples and although they’re not exactly like your room, I think it can give you ideas.
I'm afraid I am on the remove it team. I know painting it is an easier and less messy option but it does not have any merits that I can see. The shelving is very chunky too. Painting it will not change the profile. The option you have been shown with what appears to be slate all the way up and the low unit for the tv is much cleaner and more modern. I don't know if you could clad the stone work.
