Has the tiler got actual samples? There should be a book with long metal samples in, the grout is actual grout not plastic. You need to first of all match the hue, that means select a colour that is the same colour as the tile, sounds daft but no greys are actually pure grey, they tend towards cool blue or taupe or even green greys. After that select the right tone, this means how light or dark. You want to avoid the palest I should think so try a mid toned one. For the cost of a bag of grout, it might be worth testing a small area first before you commit.

What you can do - is a 3D picture perfect model of your room based on the fittings you already have, tiles fitted and then see which grout looks best for you.
