I think option 1 is not leaving enough space at the ends. It might look unbalanced. My island is 3100mm and I have clear three glass pendants of a similar size to yours and they are 600mm apart. This leaves 950 at each end but they are central as the hob is the item requiring the lighting. I think with the size of your island two pendants would be sufficient. Play around with it and don't make them too high either for cleaning. You only need about 750mm above the island worksurface. Mine are over a metre high and require a two person, two ladders, glass gloves and a chunk of time to remove and clean. If yours are glass think of easy cleaning. Mine is 1600mm wide so difficult to reach and you can't stand on the quartz.

You could also consider a long linear pendant. You need to shop around to find one that has the power supply at just one end rather than the middle but a lot are made like that.
