Replacement windows Installation Methods

I am trying to find out which is a better way to install replacement windows. One window installer will do the box trim method. The other installer will trim back the drywall and trim back the window sill. He said this method would require less caulking thus less chance of water penetrating behind the window They both said that the replacement windows will stick out several inches from the window frame.
I am trying to get any opinions on the advantages and disadvantages of different installation methods that each installer wants to use.
