We have 8ft ceilings and did a 9ft tray ceiling just over our table (where our bump out is). We couldn't raise the entire kitchen ceiling because we have a 2nd floor above half of it so this was our only option but I really love it

How low are your ceilings? b/c if they are 8ft they are not to low, just standard. How about some skylights ?

Anything involving a roof is major money. Permits, materials, contractors, structural engineers etc. are all needed. Get some quotes if you want, but you'll likely never see the money back.

Mine in my 50's ranch are very low. When renovating before moving in I added double skylights so a large area of the kitchen's ceiling is bright and light filed and feels like it's soaring above. This makes all the difference in how the house presents to me, and the remaining low ceilings don't bother me at all.
