I always match switchplates to the hardware in the room- match it to the faucet. i like the contrast. Metal is more durable and easy to clean.

I definitely wouldn't do 5, especially if seating is plentiful. Too leggy and too cramped. I'd put a couple on the short side, away from the range for the littles who might like to have their snack or do their homework there.
