Bring a cabinet door and head to the local stone yard. A solid grey quartz, a white and grey speckled granite, etc. would work. DOn't worry about the backsplash until the countertop is INSTALLED. Make sure you see the stone you're installing in person and sign off on the template in terms of veining.
