Sounds like a great idea! The last apple pie I made didn't turn out too good. I think I used too much spice-my Mom used to use cinnamon, cloves and nutmeg. I guess I over-did.

That's the recipe I use also. I'm going to buy apples at the next farmers market and try this. I love apple pie but hate peeling the apples. I'm going to do this and freeze them for Thanksgiving. Thank's bunches for the tip.

@ linda_6: I use organic apples & don't bother to peel them, just slice extra thin, using my Cuisinart. The peels get very soft (like baked apples) & it's more nutritious too = )

Wishing I had the freezer space to do this. I do freeze the pastry dough ahead of time, tho...

I make some crusts around the beginning of November. Roll them out and freeze between parchment paper on a pizza pan. Ready for the holidays.

Rose Pekelnicky I have the Betty Crocker Cookbook I got before I was married in 1969 and my grandmother's. Yes, I use the book. I have never left apples unpeeled so this will be new. I wonder if I have eaten pies like that.

I like making Ina's Apple Crostata. It's an unformed pastry and is easy and delicious.

I do like the idea of rolling out the dough and freezing it. In my freezer, they would get broken though. :-(

I was reading some of the comments and I've never had the pastry melt away from the apples and all over the sheet. That I don't understand.

Sometimes I use all butter and sometimes I put lard and butter. I never ever measure salt, and use much less than any recipe calls for, so I don't use the 1/4 tsp. Some people said it was too salty. So don't let the comments deter you from trying it.
