Live in it for a while to get a feel for how the house works and does not work for your family. Moving the table lengthwise in parallel with the kitchen would give you more space for now. The changes you are proposing are expensive so you want to get it right. We lived in our house for a year after we bought it and, while I was frustrated at times with the layout, I completely changed my mind about the changes we made. It also allowed us to save a bit more money so it was definitely worth waiting.
