Granite is a igneous rock that is mainly composed of quartz. So that makes granite very hard a great surface for a kitchen counter. Quartzite is another metamorphic rock that is also mainly composed of quartz. The problem with some quartzites is that they can also contain calcium, stones that contain calcium can etch when it comes in contact with anything acidic eg: tomatoe sauce, vinegar, lemons. The picture above is a quartzite called Sea Pearl. I have done testing on Sea Pearl and they did not etch. I recommend you asking the your fabricator for a sample and conduct your own testing to make sure that it will not etch. The etch marks in my opinion is not a big deal I feel that it becomes part of the patina of the stone. You can also opt to go with a honed finish, honed finish will make etch marks less noticeable. Also etch marks can easily be polished out by a professional. I have customers that I have done carrara and calacatta marbles for their kitchen who we have a contract to come once a year to remove etch marks. Anyway I hope this helps.
