That wall treatment is 3/4" poplar shiplap paneling about 6" wide - If you google how shiplap paneling is done you can see the detail of the application. It is not tongue and groove, it is done with a series of rabbets in the edges in the boards that allow you to control the width of the gap between each piece. These gaps were about 3/16" high.
