This is a nice tray ceiling design with drywall and crown moulding.

Shed ceiling with drywall and framed sidelight. With recessed lights and pendant fixtures a drywall ceiling does gain character.

Another very simple ceiling with character. The texture is a nice change from drywall, and the paint a nice change from white (especially if all cabinets are white).

Shed ceiling - this may be an option to consider to give character to the space without renovating the living room ceiling.

If separation of spaces is desirable (or we need to keep a structural wall) a broad arch like this could be a possibility. Would need to be complimented by finishes with some curves.

This is a nice ceiling detail considering limited height. The finished ceiling looks to be at 8', like your existing.

This shed ceiling could be an option for both the kitchen and bedroom, and I like the look of the wide planks. The larger timbers are great, but may be too bold of a statement. (btw - I have this flooring in my kitchen and get compliments on it.)

Tray ceiling with beadboard. The tray ceiling may be a very nice way to seamlessly integrate the living room ceiling to the kitchen while dramatically defining the kitchen space.

Beadboard ceiling. This follows a cottage or farmhouse look and would be less expensive than a vaulted ceiling, more than a drywall ceiling. The intermediary "beams" are nice to break up large/tall ceilings, but are also expensive.

This is one of the more costly looks, to give you an idea. It is maybe a little too dramatic for the character of the house, though.
