This is kind of what the range hood would look like if it does into the drop soffit. I might be able to get rid of most of the soffit, and just have a box along the wall like they have here.

The only pipes I really need to cover up are about a foot to the left of where the range hood would go. So I could either do a fake beam like they have here, or a soffit that starts just to the side of the range hood (rather than have the range hood go into the soffit
