I have lost 100 pounds in 18 months, by eating very low carb, nutrient dense food and fat, no counting calories and for me no real exercise. I just can't believe how easy eating this way of eating has been for me, I am never hungry, I eat 2 meals a day and rarely snack between meals and if I do it is because I have to have food to take a medication then I will eat a piece of meat, cheese or an egg.

I bought a pound of cooked baked ham the other day and was surprised how heavy that pound of meat was and I lost 100 lbs of that heaviness. I still have joint pain, osteoarthritis which is to be expected after breaking my knee and back but how much worse would I have felt if I had all that weight on my joints.

I have also learned what food causes me inflammation, pain, arthritis flare up and gout. Vegetables that I used to love to eat. Tomatoes, asparagus, mushrooms, rhubarb, cauliflower if I eat it 2 days in a row, bell peppers, cabbage. I can still have a good variety of non starchy vegetables.

I don't eat bread or grains but there are good substitutions for those so I don't miss them. I make chaffles to use as burger buns, Palmini Hearts of Palm noodles or zucchini noodles in place of pasta. Since I have lost enough weight I can eat a few more carbs now than when I started. I can have some low sugar fruit, I can have low carb wraps or Wasa type crackers and some nuts but even some of the nuts cause me pain like almonds and pistachios. Now and then I will eat a bun less burger from a fast food place if I am out and about. I make a crustless pizza when I might want pizza.

I don't crave sweet foods, that went away the first week of eating low carb. My poor stand mixer hasn't been used. I don't even make "Keto" treats or desserts or use sweeteners if cooking or baking and only once in a while I will have a zero sugar pop. I prefer drinking flavoured sparkling water and drink about a litre a day.

My new Doctor when I first went to see him and I told him I was working on losing weight he asked me if I needed help, he could put me on Ozempic and I said no, why would I take a drug when what I was doing, eating clean, was working for me. After getting my blood tests everything was good except high uric acid which I already knew I had which is genetic and some kidney damage most likely caused by the diuretic medication I have been prescribed since I was a teenager.

I do have some health issues unrelated to weight. I have A-fib with bradycardia, I have vitilago on my shoulders and neck and arms and am hoping it won't go to my face. I have a sluggish thyroid. I have to wear a compression wrap on my leg because I damaged it running into a truck hitch, but I have no vascular blockages. With my bradycardia I am at a risk for falling, or fainting and that concerns my Doctor more than anything.

Now with the weight gone I am thinking of joining a gym to build my core strength up because after breaking my back I still need to use a cane for support and I want to get rid of that and get back to walking distances like I used to do. I still want to lose about 20 more pounds and if the weight continues to come off great and if not I am healthy by eating this way. I won't ever go back to eating the highly processed, premade factory made foods I used to eat. I have learned so much about nutrition. I post pictures of my meals daily on FB to keep me accountable and I have had so much feedback that showing what I eat is helping others change their eating habits and for some to reverse their Type 2 diabetes. One day I will post a before and after picture. I did post one on FB recently just so I could see how much I changed. haha I am dang proud of myself and thankful to my brother who talked me into doing this with him after we lost our younger brother.
