I feel completely safe and it has allowed me to do some really long laborious tasks such as repairing lath and plaster ceilings and restoring cornice in comfort. It has wheels on one end so you can move it around the room easily and you can cover a bigger area than a ladder without moving it along. The wood ceilings are unusual and give your house character. I’d want to be very sure before removing them. Looking at the photos (which may be deceptive, you’re the best judge of that) it looks like the wood has a sheen/varnish. Personally I’m not a fan of this - I think they would look much better with a matte finish. I would also consider staining them to mitigate the yellow tint. Or, if you have the height and budget, you could break the continuity by introducing black beams to add more interest up there. Whether you want to keep it in red brick, or give it a more modern look by painting the brick in white or black, is up to you. Personally I’d go black, but it’s a matter of personal taste. It would make the ceilings even more impactful and would be a good background to your furniture and art. I would also definitely change the curtains to some that touch the floor - the current ones are too short and that’s immediately what the eye is drawn to. They need to gently kiss the floor.

I am not sure what you're asking here. Has an architect started work on these? They should be able to advise. Standard floor to ceiling height on a new build is usually around 2.4m. Between floors, this allows for plasterboard ceiling, joists and floorboards which will be around 250mm - 300mm depending on what depth of floor joists are needed. The overall height of the build you or the architect asks for will be to the ridge of the roof and this obviously depends upon the size, style and pitch of your roof. To give a lofty feel you can go up to 3m floor to ceiling ...a big stately home mansion tend to start at 3.6m. Even 2.7m will give you a better feeling of space but I would usually look at this to be in proportion with the size and grandeur of the house in general. There are also lots of other interior design tricks you can do - like the use of colour, direction of flooring and wall materials or adding double doors from your hallway into your other rooms, that will also help to make the rooms feel larger and more specious.
