Different Ceiling Heights in Kitchen

Hi, I'm installing a traditional style kitchen in a 19th century cottage. The kitchen space has been extended so the original ceiling is 2.1m and the extension height is 2.7m. The island will span both these sections, so do I opt for 1 pendant light near the bar stools in the lowered ceiling or install in 2 at different heights? I've attached a photo of the existing kitchen showing the island marked out on the floor in blue tape.
Also, I would like to have traditional molding above the upper cupboards but don't have the space on the lowered side so it currently finishes 3/4 along the extractor fan cover (see oven elevation on plan). Would this look better without any molding?
Any advice would be appreciated!
