Different Ceiling Heights in Kitchen

Hi, I'm installing a traditional style kitchen in a 19th century cottage. The kitchen space has been extended so the original ceiling is 2.1m and the extension height is 2.7m. The island will span both these sections, so do I opt for 1 pendant light near the bar stools in the lowered ceiling or install in 2 at different heights? I've attached a photo of the existing kitchen showing the island marked out on the floor in blue tape.
Also, I would like to have traditional molding above the upper cupboards but don't have the space on the lowered side so it currently finishes 3/4 along the extractor fan cover (see oven elevation on plan). Would this look better without any molding?
Any advice would be appreciated!

Hang your pendants so the lights are both at the same finish height - I have that same situation in my own kitchen and it works fine - side note - if it's not too late and already in - I'd suggest you move the bin and DW to the other side of the sink - so it's not a trip hazard between hob and sink.

We used a local company specialising in bespoke kitchens which could fit cupboards all the way up to the ceiling. It was a more expensive option but was so much better value for money in the long-term as it gave us masses of space. A small set of aluminium steps hangs inside one cupboard. True, some of the space is less accessible on a day-to-day basis. But it is dust-free!

Well, 240 is ok, but 260+ would look great, but it shouldn't have to cost a fortune. Perhaps leave the beams bare? (can still add some insulation and drywall inbetween) Create a good lighting plan and paint wisely, to enhance any height visually.

Agree with the above. For your pattern / feature tile to stand out more, the other tile should be extremely simple / plain. The colour of the chevron tile isn't very clear, if it is a grey, it may be worth going for a pale grey grout (similar to mapei ultracolor moon white or silver grey), so it can be used all round with chevron as well as the plain white tiles or alternatively, going for a complete contrast and matching the grout to the tiles they're going with. Hi. I'd go without the mouldings personally. Re the lights I'd probably go for a pendant and a recessed light so as not to make the ceiling feel lower. Having said that pendants at the same height could work depending on both your height and the style of light if you're not fussed about making the ceiling look lower. My basement ceiling is really low and I've got spots all over (as there wasn't enough room for recessed lights) but I also have a low light over a table. Something in glass may not have such a visual lowering impact

It looks like
you're creating a really nice space there and you’ll really benefit from open
plan living. My first thought is to use one single pendant – I’ve seen multi
pendants used in this situation on the low then the high ceiling before and, in
my opinion, it really draws your eye to the imbalance of the pendant heights.
This is subject to taste of course, but something like the No.1 pendant in
walnut by Tom Raffield not only looks great but would really help to pick out the walnut detail in your kitchen.
