At first glance it should be possible to turn your lounge & dining room into a kitchen diner. Does that fireplace work and does it have a flue? Your existing kitchen and utility could now become a snug and study. It all depends on your budget and how much disruption you can stand. The rear porch could also be incorporated into the snug & study if you can manage without it. I think I would keep the generous hallway as it is practical for storage etc.

We did think of the lounge and dining room being a large kitchen/ dinner but we were worried that the kitchen now would be a strange shape for a lounge, plus I didn’t want access to the garage through a lounge so we would also need to block that up. We don’t mind some disruption if the flow of the house works better.

I wouldn't worry about strange shapes for a lounge. Quirky is always more interesting and gives you corners for small furniture items, plants etc. My house is a boring rectangular box with no interest. You could use small walls for bookcases, a desk setup or a small bar cabinet area.
