I know its going the wrong direction in containing costs, but 48" is a LOT of shiny stainless hood to put on my wall. What do you think about a hood insert covered by a matching set of panels like in this picture?

LOVE how clean the hood looks going straight into the soffits. Would we save significant $$ taking out the display cabinets at the top and drop the soffit to the fridge/hood/cabinet line?
