jadylane123 We ended up using a satin finish white subway in our kitchen but almost everything in the kitchen other the sink and some detail on the ceiling fan is either a matte finished or brushed stainless. Gloss would have looked really out of place in our space.
Our first priority was to find a tile that mimicked the finish and texture of the counter tops. It also had to be a similar temperature white to the cabinets even if the shade was different. Our floors are our show piece so we wanted a backsplash that would blend in.
I think gloss tile would look nice with your counters but everything might become too monotone and you would loose a lot of depth. If you were open to it a think a light and warm blue or green crackle tile could look really nice in your space and really bring your counters to life. You could even use a light grey grout to pull some more of the detail out of your counters and keep the backsplash from being too distracting.
