If you want "unlimited" hot water for all 7 all the time then tankless. If you have the right location and want to save money, energy and have better indoor air quality then choose a better tank water heater, as in a Heat Pump Water Heater. I have a client who's very happy with the AO Smith Voltex 80 gallon unit and they seem well reviewed. My choice would be Steibel Eltron's 80 gallon unit. 6 people would push the performance of these two beast's ~80 gallon first hour rating, but if you could stagger usage well and put up with running out of hot water from time to time, they would definitely be a better investment.

I tried a few things with your kitchen this evening and landed on the idea of just using the areas labeled kitchen and sitting room as your kitchen. The pinch points around the dining table concern me a bit, but if my dimensions are correct and if you have a table around 3x7' you'll meet recommended minimum walkways. I do think opting for no bump out is a missed opportunity, though.

1. The "hobby room" would make a much better combo hobby/mudroom. See if you can add a sink and move the garage entrance down there as well as a door to the family room. It would be fantastic for family arts/crafts! 2. When folks post their Kitchens here for remodel, the first thing they do is rip out the monolithic corner pantry. My friends just did theirs last week. Skip the built in corner pantry and put a shallow reach in pantry across the hall from the fridge in the optional drop zone area.
