The storage niche in the wall on the kitchen side like this one should be more than ample. Also, a drop down bench like this one mounted on the wall is functional and takes up less space than a bench that sits on the floor. Concerned about cleaning the bench though.

Notice how the shower door opens in front of the toilet. We could do that to free up space to the side of the shower for the vanity. Make that vanity as long as possible!
