Don't think you will get one piece that big would be very awkward to deliver and fit if you could. Could you not split it into 3 one piece for where the hob is and the other two each side of it.

Glass would look good - give you a little reflectance without mirroring everything on the worktop. Also could be a subtle way to introduce some colour. If you use clear glass with screw back type fixings, then you can change the colour now and then by painting the wall behind if you're nervous about colour, or think you would want to change the look now and then. Another option is a stainless steel, which again would add in a little light reflecting but in a grey tone that would work well with what you have.

If you did do tiles - which would look great - say chevron style if you like these - and do a darker grout - behind the cooker does get splattered, so the darker grout would not show - the tile area needs to cover right up to the top of the kitchen cupboards and round the cooker hood. It is strange how years ago everyone stuck a piece of stainless steel there - they are a nightmare to clean, and admittedly look out of place.
