Hello, I have a lot of ideas for you! Before anything else I always first suggest people to think of their style they like and start off from there to make life easier. We all have some style we like or it could be even multiple. This Living area looks beautiful, feautering Traditional/Rustic style. You got to think of what style you would like to have, or how is it going to be the interior decorated cause that counts as well. You said you wouldn't like to go for nothing fancy or traditional. I would suggest you the spot lights to keep your space bright, and they would actually look pretty nice fitted in the the beams. A contemporary style chandelier would also look great in the middle of the room, you could consider glass lamps, they are very popular. I also thought of Industrial style and added a pendant light. Maybe others will have ideas but you seem a bit limited in what you can do or to me anyway assuming you chose the glass lid for safety. I'd paint the walls in a washable, moisture resistant paint (I might look at little Greene ). If you still want a splashblack of sorts you could just paint in a splashblack which could look quite effective or maybe use a metallic leaf or the microcement/polished plaster could work, I'm just not sure how thick it is but I believe it's extremely thin (I will see if I can find a pic if you like that idea). You could always add shelves over the sink

If you think it will get lots of light - it might be worth considering honed granite tops rather than the traditional glossy ones. Will cut down on the glare ! Tester pots are your next step - try colours you like - but maybe a couple of shades darker than you like in the shop - as if light drenched - can strip some of the colour - ie if you like Manor House grey - try Moles breath instead . Also those colour a photo paint company apps are fun to try too !
