Grey is also a good call, as it will coordinate with your kitchen units but allow room to add coloured accessories. False, I suspect more:) as you've got low ceilings I would stick to white or something with a hint of grey and use colour/texture for accessories. For white it's probably best to pick up some colour charts and then try a few testers. Little Greene shirting is a pure white which may be worth looking at. For something with a hint of grey have a look at fired earth bone white, farrow and ball strong white or crown sail white

Book matching is something that good fabricators do. It sounds like you need a good fabricator. Although - as I understand it only certain quartz with a high price tag can be book matched. And you have to do what you are suggesting where you use more than one slab and the wastage adds to the cost. The image is of Dekton not quartz which may be an easier way of getting the result you want.

They’re fine to use otherwise they wouldn’t be manufactured. However glass is a better material. It will need templating and is more expensive than laminate but is easier to clean. You can choose a BS or RAL number to have the glass sprayed to, but if you leave it clear the colour of the emulsion on the walls will show through so you don’t have to worry in future about respraying it.
