Love your mock up and to be honest most people struggle to visualise so you definitely aren't alone. To answer your questions:

Do I
1. go different lights each area because ceiling and wise they are different areas.
2. Match the kitchen and dining areas,
3. match all three

Personally I would ensure that all three are consistent in style. For example if this is going to be a modern living space, then I would stick with modern lighting (you can break the rules with one show-off pendant, perhaps over the dining table, but it would be a feature).

Over the bar, due to the hob area, it isn't very practical to have pendants. You could have a surface mounted piece to make use of the fitting you have, but in this case I would consider lowering the ceiling throughout the kitchen to add downlights and use the hood as a source of lighting too. If that option is just too expensive (I totally understand) and you have to use what you have got, then a long or double strip of track lights which you can angle in directions for cooking would be my choice. It will also give you the output and practical lighting you are looking for. Another take but less expensive would be to just lower the ceiling above the bar (around the beam - extending either side).

If you did lower the ceiling to add downlights I would extend it past the beam, just enough to fit a row in for the bar, this side of the beam. Many people are afraid of lowering the ceiling as they feel it will make the space "darker". In this case I feel like you read the height lower anyway, due to the location of the beam. Having a clean / neat / functional lighting solution would be my priority / preference here. That means you are pretty free to do what you want around the rest of the areas too and the change in ceiling height will add to a more theatrical wow when walking into the dining space from the kitchen, especially if you hang one or two focal pendants above the dining table.

When it comes to the seating / living area around the corner, make use of floor standing lamps (in the same style, ie, country, modern, traditional as the other areas). They don't have to be the same colour, each space can have its own mood, but I would consider whether in each case you want to make the lighting a "feature" or not. So blend it in if you don't want it to stand out, and contrasting colour or shape for "look at me".

Oddly enough I just ripped out a lowered ceiling area over what will be the breakfast bar area but it had tiny starlight sized lights which were worse than useless. Having looked at pictures and show homes I know realise that an overall themed look is needed. Thanks for input photographs were a great help
