Help with extension plan

We are hoping to have a single storey rear house extension and knock down some walls to make an open plan kitchen living dining area. The problem is I can't visualise the area at all so can't decide if it's too big or too small or what layout to have. I have purchased house design apps and they are not helping at allI have attached our current layout. In the middle is the kitchen (4.4m length as can't see on diagram). To the right is the dining room. To the left is small utility and behind that is the garage.So we want to knock down the wall between the dining room and kitchen. Our initial plan was to also knock down the wall between utility and kitchen and go out 3m across the whole of the rear house but the builders who quoted said it would be too big and 1.5m would be enough. Or to go out 3m but keep the utility area. Another option was to knock down walls and convert the garage and not to extend.I'm interested to know what you would do if it was your house.
