If you have a good lighting shop you could draw up a plan and take it to the shop for advice. Check out this article about kitchen lighting. I followed this advice and it gave me a completey different lighting plan that I would not have planned. I actually have light where I need it and not because it's part of a grid on the ceiling. Even the adviser at my local electrical shop liked it and advised me to remove 2 of the ceiling lights - I think my double spots are spaced 1.4m apart. You also need to think about task lighting for areas where you will be working and need sharper/brighter lighting. All of the info is in the link below. Hi Julia, it's a bit difficult making suggestions from a distance without seeing and 'feeling' the space but you have several options... pendant lights are certainly one, as Pavilion Broadway has suggested. You could have several dotted around the space, even hanging them at different heights - which could be fun. Alternatively you could use LED strip lighting around the room - this gives a very modern look and of course could be used in conjunction with other types of lighting. The attractive vaulted ceiling means you will be looking up at it so you don't want to be blinded by spotlights pointing down and remember you'll occasionally need to change bulbs so whatever you install make sure it is accessible. Depending on how you decorate and furnish the room you could consider a variety of lighting that works from the floor upwards. I think we are too often stuck on the idea that lights have to come down from the ceiling. They don't. Hope that helps but will be happy to discuss further. Best wishes, it looks a super project.
