Changing flat ceiling to raked

Has anyone had any success with removing their flat gyprock ceiling and reinstalling it to follow the sloped, or raked, line of the external roof? I’m hoping to get some more ceiling height in the living areas and the ceiling cavity is huge. Is it possible to remove the flat ceiling and reinstall a new ceiling further up without changing, or lifting, the actual roof?? The trusses are quite lovely and I wouldn’t mind if they could be seen. I realise some walls would need extending and re-certifying.
