As for privacy, shutters with louvres will be your best bet. You can tilt these easily, and even opt for a hidden tilt rod if you'd like a clean, uncluttered look. It is so lovely to be able to leave a door open in summer months, but a draught is not pleasant so would have the fixed panel closer to the bed. To keep your view unobstructed you could fit any drapes you might want so they can be pulled right off the window, either all the way along the wall if one full length or on both sides if two panels.
