The floors are a natural white oak with a Tung oil finish for water and stain resistance.

I'd also be inclined to swap them as Jonathan suggested. Check fire regulations, as perhaps you do need to rotate the stairs to allow an open kitchen. (I'm in the Netherlands so can't advise on these.)

Those floors were engineered FSC-certified white oak. Not sure about the sawing pattern, sorry. Finished on-site with Tung Oil.

Bleu Nest, the saw pattern is Plain/Flat sawn. I see plenty of cathedrals in the planks.
