First off, you will need to check if you have to have planning consent to fill that void. It's probably there in the first place because planners rejected the idea of an attached garage by previous owners. Check any consents you already have for the garage as well. Even though you may only use it as a shed, because it's attached to the house planning would likely consider it an extension, especially if it uses a fixed roof structure. This is why people put up garden offices/sheds. Easier to do and less interaction with planning.

Would it be possible to link the entrance hall to the garage with a side extension? This would give a hallway to allow access to a kitchen at the rear (If you are prepared to give up the garage) …..It would cost but having the kitchen in the garage open to a converted orangery dining room and the current dining room and your bedroom combined to make a sitting room (your bedroom moving to the current sitting room) it could flow and be more connected or separated when you need to be….you could also turn the stairs 90degrees to allow the current fining room the same depth as your current bedroom
