I’m with Daisy - I like brass too, but prefer it in darker tones. If you like a more antique effect, you could also look at pewter finishes and also nickel. Both have silvery tones. You could also go darker too - I really like a company called Jim Lawrence for handles and things - they do a gorgeous finish called “polished”. (They also do lovely matt black finishes too - they are quite pricey, but it’s often worth looking for ideas and then buying similar elsewhere!!).

Really depends on how deep the handle recess is, this can vary depending on the door manufacturer so if its a vinyl foil wrapped door then the recess is very small and there's not a lot to grip on to for opening fridge and freezer doors, other doors like laminated birch ply doors can/may have a deeper rout for your fingers. Some Neff fridge freezers have an adjuster so you can make the doors easier to open. But for all these doors, if its only an 18mm thick door then you're still not going to have a lot of finger room which is why most J profile handleless doors are 22mm thick. Not heard of them wearing down, but then I don't think this style are particularly big sellers

One more thing to think about (sorry!) - you don't have to have all the same handles on every single door and drawer. Some might merit a longer pull, some a shorter one, some a knob rather than a bar pull. It's best for them to all come from the same range so the finish is the same though. Just have a look at some of your inspo pics and pay attention to the handles - are they all exactly the same?? Sorry I know there's a gazillion decisions to be made, but 40 pulls is a lot - maybe and uppers chould be knobs instead to lighten the visual load, add a bit of interest and make it look really intentional?
