The first question is would you ever want to be able to have the whole space open (eg for a party) or are you happy for it to be divided up permanently with just a doorway or double doors through?

If you want to be able to open up sometimes then that points to something like internal bifold doors.

If not then something like a Crittal wall with double doors in the middle, would go well with your stained glass panel. Proper Crittal is very costly but some companies use wood or aluminium frames instead to create a similar look more affordably.

Second question is where to divide. The obvious place is where the floor changes, is that where you had in mind?

Definitely swap areas before you embark on any building. Live with it for a few weeks then see how you feel. You have a gorgeous space, play with it a little more.

Since the sink is covered anyway could you just have a small divider on the left hand side? I can't find the perfect image but you get the idea. Hopefully it would block Some of the sound although I always have music on when entertaining anyway! I know I mentioned the change in floor before but the first image looks good

I’ve moved into a new house looking idess on closing off open plan as smells from cooking washing machine noise in utility room etc
