I'll be taking my Karcher steamer to all the tiles / bathroom / kitchen once we are in and before the furniture goes in, regardless. Where are you in the south of France? The house we're moving into is about 25 mins north of Montpellier. :)

Are you saying the glass splashback is the wrong size because it doesn’t go all the way up to the extractor fan? If so I’d guess that they’ve installed a standard size as opposed to a purpose made size. If so l would just take that one down and get a taller one made. You could always have the splashback all the way across the wall. l don’t think it needs tiles too. You could add a tint of colour with the emulsion,

You could go with a similar material you've used for the worktop, so it feels and looks continuous. You could also go with a mirrored look to expand the space, visually. Only my opinion of course but on my screen the backsplash looks grey with a tiny line of brown and the floor tile looks yellowy and l’m not too keen on the combo. Add to that your options for the laminate are ‘mushroom’ colours and I just don’t think either of them go. Your inspo photo strikes me as being ‘top heavy’ with the darker cupboards on the top. I’d still like to see some grey laminate samples next to your tiles.
