I like options 1 and 2. If I'm honest, option 3 just wouldn't seem to do the rest of the space justice to my mind but that's just personal taste. Have you also thought of mixing a different style/period table with eames chairs or even mixing different eames chairs? The images i've found aren't quite what I had in mind but gives you an idea.

How about an L shaped built in bench with storage underneath,an oblong table in front and then foldable chairs for extra seating when you have guests? I would put a large framed mirror on the wall opposite the window to reflect light and open up the space and some colourful art work on the wall opposite the door. If you can run to having a light fitting put in over the table, this would really make the area feel special!

What might work in that case is to sand the wood sections back to the original to remove any varnish/ oil and apply a limed oak/ oak countertop sealant. I've used the Rubio monocoat 2c product which has worked excellently. Of course there is labour involved in the sanding and application but if you want to achieve your perfect look it is worth investing the time/ cost. If you follow this route you can then apply a maintenance oil a few years later to bring back the fresh look. In this case you would not have to re-sand the wood sections. How about banquet seating on one side? I think you could have curved banquet then 2 chairs. Would use less space than 4 chairs.
