Bridget, if you want colourful artwork, I'd suggest looking for palettes in warm yellows, white, a little blue and lavender. But I also think a restrained, somewhat formal piece would work well - it would fit the gently refined atmosphere of the room. Your plan sounds nice as the walnut will warm up the grey..... However I wonder if carpet is a better option for sound insulation and for cleaning plus it is easier to add wood furniture. You could choose a stripe or tartan for a more lux look. You might also consider if you want to add some white walls in the parts of the building with lower ceilings and less windows. I might also consider pale grey ceilings to help emphasize ornate white coving. You should paint the walls, ceiling and coving with a flat emulsion. Woodwork should be an eggshell- I think you get the paint your decorator wants to paint with. If you intend to rent them furnished as a serviced apartment I think that you will need to add more colours to make them feel more homely but otherwise you are planning a smart blank canvass

I usually sell my canvasses unframed nowadays. When I framed them in the past, customers often commented that the frame did not match their decor and therefore decided not to purchase. If customers want a frame they can purchase one of their own choice. Personally, I would usually choose a floating frame leaving a gap between the canvas edge and the frame. If you really want to frame them before sale, a mid tone wooden floating frame is popular.
