Old kitchen cabinets

Currently renovating our kitchen and decided to keep our cabinets - they have an old traditional style and we’re going for more of a transitional look. We just had white quartz installed and will have a patterned black and white ceiling height tile backsplash. We’re wanting to keep the kitchen bright and white! Should we leave the cabinets without hardware since there’s detail or should we add a sleek hardware to help make them appear more updated? Also, after the counters were installed we were left with a small gap between the countertop and base cabinets - partially because of leveling issues and also because the preexisting laminate had a bigger hangover. We were advised to just add trim. Has anyone seen this done before?
