Splashback decision

We plan to have a granite upstand in our new kitchen with just paint above . Our builder is telling us we will regret not tiling our splashback. He suggests tiling on top of the upstand which I think looks awful. We're not totally against tile but we both think it looks a bit dated. If we did use it we would do it instead of the upstand. Definitely not both. But I keep scrolling through pics and we both much prefer just an upstand. What are the views on this? Has anyone not tiled and regretted it? Obviously we would need something behind the hob, we are considering a glass panel. Unless we get talked into tile, in which case we would run the tile up behind the hob. So far, tile we do like is a white metro style. Cupboards are grey shaker. Worktop is river white granite. Suggestions and advice please!!
