Load bearing wall. Open plan to closed plan. Advice needed.

Hi everyone.
I have recently bought a house where the owners removed a load bearing wall themselves and used a steel beam wedged with wood to hold the wall up. We want to close off the wall again as it's noisy and cold! They old owners built a 6 inch frame around the beam and it looks ridiculous sticking out at odd places. If we were to tear it out and build posts under the beam to support the beam would we still need to box the beam in and frame it or could we plasterboard on the beam and have a nice flat consistent wall.
