I'm only a DIY fan (not a pro) but I did a personalised splash back at our old house - I don't seem to be able to find the photos mind you :( I googled "customer design wall paper" and created the design, then wall-papered the wall behind the hob and mounted a clear splash-back glass over it. It worked a treat - was still looking fab after 5 years when we sold the place and it total it cost around £40 for the wall paper (the area was approx 2m wide by 1.5m high) and the clear splash-back glass was about £70

My sister has the acrylic splash backs and once up you can't even tell the difference and they are half the price :)

I would stick to neutral colours as your kitchen sounds quite contemporary and anything to flashy may upset the balance. Black glass looks very elegant but a white or transparent splash back will help to open the room up. Grey is a good middle ground but too much grey can look rather drab. I would say that the deciding factor should be the size of the kitchen as black may close the room in. But it is wise in my opinion to go for the same finish as you have for the work tops. I have enclosed a CAD design of a kitchen with cashmere cupboards and a black glass splash back for inspiration. Would love to see some pictures of your kitchen!
