How would you tile this bathroom?

We are currently planning a full bathroom refit. The layout of the sink and bath will not change but we will be upgrading everything.
However, we’re not sure how much tiling to do as we don’t want it to overwhelm quite a small room.
Should we run the tiles up to the ceiling and across the entire length of the wall? Should we do a step down when we come to the sink? Do we do a statement tile in some areas or keep it all consistent?
For the floor we’re thinking a patterned tile, paired with a warm paint colour for more personality. The house is Victorian and fairly maximalist but as the bathroom is north facing we don’t want to go too dark.
