How to co-ordinate kitchen worktops and wooden flooring

We're opening up our small kitchen and dining room to make an open, welcoming space for our family and friends. We are having a pale sage painted kitchen and light oak flooring. The style is elegant Shaker! We are considering a mixture of light oak worktops with granite worktop around the sink and stove. I have two questions about the granite.
The kitchen is east-facing and the morning sun streams in beautifully. Would there be too much glare from polished granite? Has anyone used honed granite?
I prefer a warm lighter coloured granite, similar to the colour of light oak. Has anyone tried co-ordinating the colour of granite with the colour of wood in this way?
